kosher salt to taste

How to Make Pumpkin Pie Filling from Scratch

Step-by-Step

  • 1Cut the tops off of the pumpkin as you would a jackolantern.
  • 2Quarter the pumpkins lengthwise and scoop out seeds.
  • 3Sprinkle brown sugar and spices, along with a small bit of the salt on each quarter's shell.
  • 4Bake at 375 for 30 minutes or until flesh is tender.
  • 5Let stand to cool.
  • 6Cut away outer skin.
  • 7Puree to desired consistency.
