My sister Barbara, made me this recipe about 2 years ago and I was HOOKED!! If you like pumpkin, this is an AWESOMELY (is that a word? lol) DELICIOUS dessert. Well, you could eat it any time you want really. I have eaten for breakfast with a hot cup of coffee........WOW! Now THAT'S a breakfast of CHAMPIONS!!

Ingredients

  • 1-15 ounce pumpkin
  • 1 can evaporated milk
  • 4 - eggs
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 box yellow cake mix
  • 1/2 pound (2 sticks)melted butter
  • 1 cup chopped walnuts or nut of choice (optional)
  • - whipped topping or vanilla ice cream

How To Make pumpkin crunch

  • Step 1
    Mix first 8 ingredients together and pour into greased 9x13 inch pan.
  • Step 2
    Sprinkle 1 box yellow cake mix over pumpkin mixture, then 1 cup chopped walnuts over cake mix.
  • Step 3
    Then drizzle melted butter evenly over nuts and cake mix.
  • Step 4
    Bake at 350 degrees for 50 to 60 minutes. Serve warm with a dollop of whipped topping or vanilla ice cream. ENJOY!
