My sister Barbara, made me this recipe about 2 years ago and I was HOOKED!! If you like pumpkin, this is an AWESOMELY (is that a word? lol) DELICIOUS dessert. Well, you could eat it any time you want really. I have eaten for breakfast with a hot cup of coffee........WOW! Now THAT'S a breakfast of CHAMPIONS!!

Ingredients

  • 1-15 oz
    pumpkin
  • 1 can(s)
    evaporated milk
  • 4
    eggs
  • 1 tsp
    nutmeg
  • 1/2 tsp
    ginger
  • 2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 3/4 c
    sugar
  • 1 box
    yellow cake mix
  • 1/2 lb
    (2 sticks)melted butter
  • 1 c
    chopped walnuts or nut of choice (optional)
  • ·
    whipped topping or vanilla ice cream

How to Make Pumpkin Crunch

Step-by-Step

  1. Mix first 8 ingredients together and pour into greased 9x13 inch pan.
  2. Sprinkle 1 box yellow cake mix over pumpkin mixture, then 1 cup chopped walnuts over cake mix.
  3. Then drizzle melted butter evenly over nuts and cake mix.
  4. Bake at 350 degrees for 50 to 60 minutes. Serve warm with a dollop of whipped topping or vanilla ice cream.
