puffy pancake pie
Say that three times fast! I think this is just plain good and so fun to make! Kids love them! Can add fruit or any topping to this. Try my (blueberry sauce) on it, pinch it too! Enjoy! Photos are mine

Ingredients
- 2 tablespoons butter or margarine
- 2 - eggs
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1/4 teaspoon salt
How To Make puffy pancake pie

Step 1**** Do not over mix this. Leave some lumps in or it will not rise.

Step 2Heat oven to 400°F. In 9-inch glass pie plate, melt butter in oven and brush butter over bottom and around the side of the pie plate.

Step 3In medium bowl, beat eggs slightly with wire whisk. Mix in flour, milk and salt just until well blended but do not over mix. Pour into pie plate.

Step 4Bake 25 to 30 minutes or until puffy and deep golden brown. Serve pancake immediately. Sprinkle with powdered sugar and top with syrup. Can use any topping really. I add strawberry jam and powdered sugar sometimes or fruit slices and honey, etc.
