How to Make Puffy Pancake Pie
- **** Do not over mix this. Leave some lumps in or it will not rise.
- Heat oven to 400°F. In 9-inch glass pie plate, melt butter in oven and brush butter over bottom and around the side of the pie plate.
- In medium bowl, beat eggs slightly with wire whisk. Mix in flour, milk and salt just until well blended but do not over mix. Pour into pie plate.
- Bake 25 to 30 minutes or until puffy and deep golden brown. Serve pancake immediately. Sprinkle with powdered sugar and top with syrup. Can use any topping really. I add strawberry jam and powdered sugar sometimes or fruit slices and honey, etc.
