This is a yummy pie topped with merinque!

Whipped cream may be used for topping instead of meringue.

Either topping is delicious!

Ingredients

  • FILLING

  • 1 1/2 c
    crushed pineapple
  • 2
    egg yolks
  • 1 c
    sugar
  • 1 Tbsp
    cornstarch
  • 1 Tbsp
    flour
  • 1 Tbsp
    butter
  • CRUST

  • 1
    baked pie crust
  • MERINGUE

  • 2
    egg whites
  • 1 Tbsp
    sugar

How to Make Pineapple Pie

Step-by-Step

  1. Blend cornstarch and flour into sugar
  2. Beat egg yolks and add pineapple, juice and all to above mixture.
  3. Cook in a double boiler until thick. Pour into baked pie crust.
  4. Whip egg whites stiff and add 1 tablespoon sugar.

    Put on pie and brown in oven.

    Cool, cut and enjoy!
