Whipped cream may be used for topping instead of meringue.

Ingredients

1 1/2 c
crushed pineapple
2
egg yolks
1 c
sugar
1 Tbsp
cornstarch
1 Tbsp
flour
1 Tbsp
butter

CRUST

1
baked pie crust

MERINGUE

2
egg whites
1 Tbsp
sugar

How to Make Pineapple Pie

Step-by-Step

  • 1Blend cornstarch and flour into sugar
  • 2Beat egg yolks and add pineapple, juice and all to above mixture.
  • 3Cook in a double boiler until thick. Pour into baked pie crust.
  • 4Whip egg whites stiff and add 1 tablespoon sugar.

    Put on pie and brown in oven.

    Cool, cut and enjoy!
