Super fast and easy and the recipe makes 2 pies. This is a great recipe if you need a last minute take along item to a pot luck or family gathering! Got this recipe from a co-worker in the 1980's!

Ingredients

  • 1 can sweetened condensed milk - can use fat free
  • 1/3 cup lemon juice
  • 1 can 20 oz crushed pineapple well drained
  • 1 1/8 cups chopped pecans
  • 8 ounces cool whip - soft - can use fat free
  • 2 packages prepared graham cracker pie crust - can use low fat

How To Make pineapple nut refrigerator pie

  • Step 1
    Mix first 5 ingredients well. Easiest is to put pineapple in a large bowl, then sweetened condensed milk, then lemon juice, then fold in pecans and Cool Whip.
  • Step 2
    Pour into two graham cracker crusts and put in refrigerator to chill. Chill about 2 hours before serving.
  • Step 3
    Note that I put that it serves 16 - that is if they stop at one piece!! If you want larger slices, cut the pies into 6 pieces instead of 8 and then it serves 12.
