Pineapple Nut Refrigerator Pie

Carol Powell

Super fast and easy and the recipe makes 2 pies. This is a great recipe if you need a last minute take along item to a pot luck or family gathering! Got this recipe from a co-worker in the 1980's!

1 can(s)
sweetened condensed milk - can use fat free
1/3 c
lemon juice
1 can(s)
20 oz crushed pineapple well drained
1 1/8 c
chopped pecans
8 oz
cool whip - soft - can use fat free
2 pkg
prepared graham cracker pie crust - can use low fat

1Mix first 5 ingredients well. Easiest is to put pineapple in a large bowl, then sweetened condensed milk, then lemon juice, then fold in pecans and Cool Whip.
2Pour into two graham cracker crusts and put in refrigerator to chill. Chill about 2 hours before serving.
3Note that I put that it serves 16 - that is if they stop at one piece!! If you want larger slices, cut the pies into 6 pieces instead of 8 and then it serves 12.
