pineapple cream pie

My dad's birthday was a few days ago, and I was thinking about him. His favorite pie was pineapple pie, which my mom made for him. I decided to make it a little differently and came up with this pie. Everyone liked it, but my husband said he preferred the original of my mother's.

Ingredients

  • 1 - prebaked pie crust
  • 20 ounces can crushed pineapple with juice
  • 3/4 cup sugar, divided
  • 2 teaspoons cornstarch
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

How To Make pineapple cream pie

  • Step 1
    Place the pineapple, and juice, in a heavy saucepan and on medium heat, bring to almost boiling. Mix 1/2 cup of sugar, (more if you want it sweeter), and the cornstarch. Once it is mixed well, add to the pineapple and stir well. Allow the pineapple to come to a boil and stir as it thickens. Cook for 1-2 minutes. Remove from the heat and allow to cool completely.
  • Step 2
    Beat the cream cheese until smooth. Add the cream and vanilla, and beat until medium to stiff peaks form. Fold in the cooled pineapple.
  • Step 3
    Fill the piecrust and refrigerate until ready to serve. You could serve this with more whipped cream on top.
