Pineapple Cream Pie
1prebaked pie crust
20 ozcan crushed pineapple with juice
3/4 csugar, divided
8 ozcream cheese, softened
1 cheavy cream
1 tspvanilla extract
How to Make Pineapple Cream Pie
- Place the pineapple, and juice, in a heavy saucepan and on medium heat, bring to almost boiling. Mix 1/2 cup of sugar, (more if you want it sweeter), and the cornstarch. Once it is mixed well, add to the pineapple and stir well. Allow the pineapple to come to a boil and stir as it thickens. Cook for 1-2 minutes. Remove from the heat and allow to cool completely.
- Beat the cream cheese until smooth. Add the cream and vanilla, and beat until medium to stiff peaks form. Fold in the cooled pineapple.
- Fill the piecrust and refrigerate until ready to serve. You could serve this with more whipped cream on top.
