pineapple cream pie
My dad's birthday was a few days ago, and I was thinking about him. His favorite pie was pineapple pie, which my mom made for him. I decided to make it a little differently and came up with this pie. Everyone liked it, but my husband said he preferred the original of my mother's.

Ingredients
- 1 - prebaked pie crust
- 20 ounces can crushed pineapple with juice
- 3/4 cup sugar, divided
- 2 teaspoons cornstarch
- 8 ounces cream cheese, softened
- 1 cup heavy cream
- 1 teaspoon vanilla extract
How To Make pineapple cream pie

Step 1Place the pineapple, and juice, in a heavy saucepan and on medium heat, bring to almost boiling. Mix 1/2 cup of sugar, (more if you want it sweeter), and the cornstarch. Once it is mixed well, add to the pineapple and stir well. Allow the pineapple to come to a boil and stir as it thickens. Cook for 1-2 minutes. Remove from the heat and allow to cool completely.

Step 2Beat the cream cheese until smooth. Add the cream and vanilla, and beat until medium to stiff peaks form. Fold in the cooled pineapple.

Step 3Fill the piecrust and refrigerate until ready to serve. You could serve this with more whipped cream on top.
