pineapple cloud pie
My grandma made a yummy pineapple pie similar to this one, but I never got around to asking her for the recipe before she passed away. I found this recipe on a box of Rice Krispies several years ago and finally got around to making it for our Christmas dinner this year, it's just as good as Grandma's pie was in the 70's!

Ingredients
- 3 cups kellogg's rice krispies cereal
- 1/4 cup brown sugar, firmly packed
- 6 tablespoons light corn syrup
- 1 package cream cheese (8 oz), softened
- 1 cup powdered sugar
- 1 can crushed pineapple (8 oz), drained
- 1 cup whipped topping, thawed
How To Make pineapple cloud pie

Step 1Combine Rice Krispies cereal, brown sugar, and corn syrup. Mix well. Press mixture evenly and firmly in bottom and on sides of 9-inch pan coated with cooking spray. Chill in refrigerator.

Step 2In large mixing bowl, beat cream cheese and powdered sugar until smooth.

Step 3Stir in pineapple.

Step 4Fold in whipped topping.

Step 5Pour mixture into chilled crust. Freeze about 3 hours or until firm.

Step 6Remove from freezer 10 minutes before serving. Serve garnished with maraschino cherries, if desired.
