We had this at a church pot luck and my husband searched out who made it and got the recipe from her. It is fabulous

Ingredients
- 1 - 20 oz can crushed pineapple, drained well
- 1 cup sugar
- 1 tablespoon cornstarch
- 4 - eggs
- 1 - stick of butter (not margarine), melted
- 1 teaspoon vanilla
- 1 cup coconut or to taste. if you like more add more
How To Make pineapple chess pie

Step 1Beat eggs, sugar, cornstarch, butter and vanilla together. Add pineapple, blend then add coconut, blend well. Pour into pie shell. Bake 30-40 minutes, at 325 degrees. until a knife inserted the the center pulls clean.

Step 2For a more done crust prebake 10-15 minutes
