We had this at a church pot luck and my husband searched out who made it and got the recipe from her. It is fabulous

Ingredients

  • 1 - 20 oz can crushed pineapple, drained well
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 4 - eggs
  • 1 - stick of butter (not margarine), melted
  • 1 teaspoon vanilla
  • 1 cup coconut or to taste. if you like more add more

How To Make pineapple chess pie

  • Step 1
    Beat eggs, sugar, cornstarch, butter and vanilla together. Add pineapple, blend then add coconut, blend well. Pour into pie shell. Bake 30-40 minutes, at 325 degrees. until a knife inserted the the center pulls clean.
  • Step 2
    For a more done crust prebake 10-15 minutes
