Pina Colada Pie
I tried uploading a picture but for some reason it wouldn't work. I'll keep trying though!
1 ccoconut milk
3/4 ccoconut-pineapple nectar
4 Tbspcrushed pinapple, plus about 3-4 tbls. of the juice
1 1/2 tsprum extract, divided
1 (3.4 oz) boxinstant vanilla pudding
1 cshredded coconut meat
8 ozcool whip (i used fat free)
1graham cracker pie crust (i used the 2 extra servings one)
1/4 cshredded coconut, toasted, for garnish on top
How to Make Pina Colada Pie
- In a large bowl, combine milk, nectar, pinapple and juice, and 1 teaspoon of the rum extract. Sprinkle pudding mix over liquid and whisk for 2 minutes. Fold in coconut and 1/2 of the cool whip.
- Pour into crust and chill for at least 3 hours.
- Combine the rest of the extract with the rest of the cool whip and top the chilled pie. Sprinkle with the toasted coconut.
