pecan pie mini muffins
A very dear friend and beach buddy, Katrine, gave me this recipe. These are delicious! I like the fact that they are bite-size muffins. But, of course, you can make the regular size muffins.

Ingredients
- 1 cup light brown sugar, firmly packed
- 1/2 cup all purpose flour
- 2 - eggs, beaten
- 2/3 cup melted butter (measure before melting)
- 1 cup pecans, coarsley chopped
How To Make pecan pie mini muffins

Step 1Preheat oven to 350. Grease muffin pans or place paper cups into muffin pans.

Step 2Using a wooden spoon, mix all ingredients and blend well. Fill prepared muffin pans 2/3 full. NOTE: you can place a pecan half on top of each muffin at this point if you so desire.

Step 3Bake at 350 for 12-15 minutes. Check for doneness after 10 minutes using a toothpick or cake tester.

Step 4FYI: 2/3 cup butter equals 11 tablespoons.
