The ingredients are a little bizarre, but the pie is tasty. I've only used the Ritz crackers, but other "buttery" crackers may work just as well.

Ingredients

  • 3 - egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 14-16 - ritz crackers, crushed
  • 1/2 cup pecans, chopped

How To Make pecan merigue pie

  • Step 1
    Preheat oven to 350 degees. Spray 9" pie plate with non-stick cooking spray and set aside.
  • Step 2
    Crush Ritz crackers and mix with chopped nuts. Set aside.
  • Step 3
    In mixer with whisk attachment, beat 3 egg whites until frothy. Slowly add granulated sugar and vanilla extract. Continue beating until stiff peaks form.
  • Step 4
    Fold cracker-nut mixture into egg whites and pour into pie pan. Bake for 30 minutes.
