pecan delite pie
Back in the 70's ,my sister and i both worked at our local mall, we would get coffee breaks together and go to the mall caferteria (WYATTS) and we discovered this pie and we would share a slice of this pie and have cup of coffee, and we chat about our day and work..and try to figure out what pie was made of...i finally asked one of employees/cooks to tell me what was in it...this is one of my fav pies of all times, light fluffy pastry like, just a lovely desert i will always make again and again and cherish the memories and times with my sister we shared over it.

Ingredients
- 4 large egg whites
- 1 cup sugar
- 2 cups crushed saltine crackers
- 1 3/4 teaspoons baking soda
- 1/2 teaspoon vanilla extract
- 3/4 cup chopped peacans
- TOPPING
- 2 pints whipping cream
- 4 tablespoons powdered sugar
- 1/4 cup chopped pecans
- 1/2 teaspoon vanilla extract
How To Make pecan delite pie

Step 1put egg whites deep glass or metal bowl beat till fluffy with 1 cup sugar...till stiff peaks form and you test the when you rub egg whites between fingers you do not feel sugar granules and stiff peaks forms..

Step 2fold in pecans and crushed crackers...mix pour into buttered pie dish

Step 3bake in oven 1 hour...take out, invert onto a plate cool it upside down...

Step 4FOR TOPPING.... 2 PINTS WHIPPING CREAM 4 TABLESPOON POWDERED SUGAR 1/4 TEASPOON VANILLA 1/4 CUP CHOPPED PECANS FOR GARNISH beat whipping cream mixture till stiff peaks, decorate top of chilled pie with whipped cream, decorate with remaining pecans...keep chilled till served...
