pecan delights
I first made these little pecan pies back in 1981 for my mom and dad's 50th wedding anniversary and I have been making them ever since. They are so good and they travel well...You will enjoy this recipe for years to come.

Ingredients
- CRUST
- 2 sticks butter or margarine, softened
- 6 ounces cream cheese, room temperature
- 2 cups all purpose flour
- 1 tablespoon sugar
- 1 pinch salt
- FILLING
- 3 tablespoons melted butter
- 3/4 cup light brown sugar, packed
- 3 large eggs, lightly beaten
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 1 cup chopped nuts

Step 1Preheat oven to 350 degrees....

Step 2CRUST; Beat the butter with the cream cheese until fluffy. Add the flour, sugar and salt and mix well. Shape into one inch balls and press into mini muffin pans. Press down with fingers until they completely cover the cup.

Step 3Place a tsp. of nuts in the bottom of each cup.

Step 4Filling: Pour the melted butter over brown sugar. Add the eggs vanilla and salt. Mix well. Add a scant teaspoon into each muffin cup. Bake at 350 degrees for 15 minutes. Reduce temperature to 250 degrees and bake an additional 15 minutes
