Ingredients
- 3 - egg whites
- 1 cup sugar
- 1-1 1/2 teaspoons vanilla
- 1/2 teaspoon baking powder
- 20 - ritz crackers (crushed) yes....i know what you're thinking
- 1 cup pecans (chopped)
- 1 pint whipping cream
- - butter for greasing pie pan
How To Make pecan delight pie

Step 1Preheat oven to 350 degrees and grease 9-inch pie pan with butter (not margarine or oil)

Step 2Beat egg white until stiff, add sugar gradually. Add vanilla and baking powder. Beat until thick. Fold in pecans and cracker crumbs.

Step 3Whip cream with a little sugar until stiff.

Step 4Pour mixture into pie pan and bake for 30 minutes. Let cool for 30 minutes or until pie is cool enough to put the whipped cream on it. Refrigerate until chilled. Then get your fork ready and hide.
