Ingredients
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 1/2 cup half-and-half cream
- 1/2 cup creamy peanut butter (use a good brand)
- 1 teaspoon vanilla extract
- - 8-9 inch pastry pie shell, baked or use a store bought chocolate or graham cracker cookie crust
- - whipped topping
- - chocolate sprinkles, chopped nuts, or a dusting of cocoa for garnish

Step 1In a saucepan, combine sugar, cornstarch and salt. Using a whisk, gradually stir in milk and cream. Whisk well to avoid lumps in pudding. Bring to a boil over medium heat. Cook and stir for 4-5 minutes after boiling begins. Do not allow pudding to burn. You must stir constantly.

Step 2Remove from the heat. Stir in peanut butter and vanilla. Mix until smooth. Pour into prepared pie crust. Top with whipped cream. Garnish with chopped peanuts, chocolate sprinkles, or a light sprinkle of cocoa if desired.
