This is hubby's favorie pie and when peaches come in season I make 2 a week just to keep up with demand LOL Enjoy Had to rename the pie LOL because when I do make it, it is Eric's Peach Pie :)

Ingredients

  • FILLING
  • 10 - peaches, fresh skined and sliced
  • 1/3 cup flour
  • 1/2 cup sugar ( you can up to 1 cup of sugar depends on your taste for sweetness)
  • 1/4 cup butter, cold cubed
  • 1/2 teaspoon cinnamon, ground
  • 1/4 teaspoon nutmeg,fresh ground
  • CRUST
  • 3 cups pastry flour, whole wheat
  • 1 1/2 teaspoons salt
  • 3 tablespoons sugar
  • 1 cup shortening, cold and cubed
  • 1 - egg
  • 1 teaspoon vinegar, white distilled
  • 5 tablespoons cold water

How To Make peach pie eric's

  • Step 1
    In large bowl combine flour, salt and sugar. Mix well, then cut in shortening until crumbly
  • Step 2
    In small bowl combine egg, vinegar and 4 tablespoons of water whisk together and to flour mixture using a fork until dough forms a ball add 1 more tablespoon of water if needed
  • Step 3
    let dough rest atleast 10 minutes in the refigerator before rolling out
  • Step 4
    this makes 2 crusts
  • Step 5
    For filling Place sliced peaches in a large bowl pour in sugar, flour and spices and mix well place mixture into a deep pastry lined pie plate and dot with cold butter and place top crust on top of the peaches and crimp cut 4 slits in the crust . Brush with egg wash and dust with cinnomon and sugar. Bake at 350 for 45 to 60 minutes until crust is golden brown.
