peach cobbler
This recipe was adapted from one of my mother-in-laws favorite old fast and easy desserts. All of the family loves it. I've been making it since the early 1970s with my changes. Mom had always used self rising flour but I changed to biscuit mix. Now my great-grandchildren are enjoying this family favorite.

Ingredients
- 2 cups biscuit mix
- 2 cups sugar
- 2 - eggs
- 4 teaspoons good brand of vanilla
- 2 cans peach pie filling
- 1 or 2 cans diced peaches
- 1 stick butter
- 1 1/4 cups milk
How To Make peach cobbler

Step 1In med. bowl, combine biscuit mix, sugar, egg, vanill and blend. Now add milk and blend thoroughly. You may use a little less or a little more. I like a fairly thick batter.

Step 2Spray a 9x13 inch pan with non-stick spray and place the butter in pan. Place in a preheated 350 degree oven until butter melts.

Step 3Pour batter into the butter. Scoop the pie filling evenly throughout batter. Drain the diced peaches and add to pan. (I usually dice up the peaches in the pie filling while it is still in the can. This makes the dessert easier to serve.)

Step 4Bake for 35 to 40 minutes or until center is firm and the top is golden brown. Watch that the edges do not burn.

Step 5This dessert is great served with Vanilla Ice Cream or Whipped Topping.
