Many years ago I was happy to see this recipe printed in the local paper since the restaurant that served it was out of business.It was one of my favorite desserts at the Pasadena Cafeteria.The slightly lemon flavor and walnuts make this pie deliscious! The strange amounts may be because the recipe was scaled down for one pie. I sometimes use all purpose flour instead of the cake flour,I've also used 7/8 c milk instead of the milk powder.Omit the hot water and the pie comes out fine.

Ingredients

  • - 1/3 plus 1 t.cake flour
  • 2 cups sugar
  • 1 pinch salt
  • - 1/3 c plus 1 t. nonfat dry milk powder
  • 1/4 cup melted butter
  • - peel of 1 lemon
  • 7/8 cup hot water
  • 1/4 cup lemon juice
  • 6 - eggs,slightly beaten
  • 1/4 cup broken walnuts or pecans
  • - 1 9-inch pie shell,unbaked

How To Make pasadena cafeteria's chess pie

  • Step 1
    Combine dry ingredients and lemon peel in a bowl.Pour in hot water and juice.Combine eggs and butter,add to mixture,blend well.Fold in nuts.Pour into shell.Bake in a 350 deg oven 1 hour or until set.
