This pie is one my mother made frequently during the summer because it is light and smoothe. She is 94 years old and could not remember the recipe, but thanks to her saving her cookbooks I found the recipe in a Sealtest Icecream cookbook that had a copyright label in the year 1954. Hope you enjoy this recipe as much as I do.

Ingredients For parfait pie

3 ounce pkgstrawberry jello

1 1/4 chot water
-
1 canfruit cocktail, in syrup

1 ptvanilla ice cream

9 inchpie shell, baked
How To Make parfait pie

1Bake 9-inch pie shell and cool. Boil 1 1/4 cups water- add strawberry jello and stir until disolved. Add vanilla icecream into jello mixture and stir until well-blended. Add fruit cocktail, drained and pour into cooled pie shell. Refrigerate. Cut and serve when well congealed.
