old fashioned pumpkin pie

I never realized how easy it can be to make pumpkin pie from scratch. I will never go back to store bought again. The best pumpkins to use are sugar pumpkins. Just cut your pumpkin in half, scoop out the seeds and insides and roast at 350F for about an hour then once it's cooled off a bit you can scoop out the flesh and puree it.

Ingredients

  • 2 cups pumpkin puree
  • 1 1/2 cups heavy cream
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 1/2 teaspoon salt
  • 2 - whole eggs
  • 1 - egg yolk
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground clove
  • 1/2 teaspoon ground cardamon
  • 1/2 teaspoon lemon zest
  • 1 - pie crust shell

How To Make old fashioned pumpkin pie

  • Step 1
    Preheat oven to 425 oF
  • Step 2
    Mix sugars, salt, spices and lemon zest in large bowl. Beat eggs and add to the bowl. Stir in the pumpkin puree. Stir in the cream. Whisk all together until well incorporated.
  • Step 3
    Pour into pie shell and bake for 15 minutes. After 15 minutes reduce temperature to 375 oF and bake 40-50 minutes, or until knife inserted near the centre comes out clean.
  • Step 4
    Cool on wire rack for 2 hours
