oatmeal pie, an amish recipe
I got this recipe from a friend who sold baked goods at the South Bend Farmer's Market many years ago (1960's). Since this tastes almost like pecan pie (which I love!) and I am now allergic to nuts I have used this recipe almost yearly, especially for the holidays. Its well worth trying!

Ingredients
- 1/4 cup butter
- 1 cup brown sugar, firmly packed
- 2 large eggs, beaten
- 1 pinch salt
- 1 teaspoon vanilla extract
- 3/4 cup milk
- 3/4 cup light corn syrup
- 1/2 cup unsweetened coconut
- 3/4 cup quick oats, not cooked, use dry
- 1 - unbaked pie crust, 9 inches

Step 1Preheat oven to 350 degrees. Melt butter. Mix with sugar in a medium mixing bowl. Add beaten eggs, salt, and vanilla. Add remaining ingredients (except pie shell) in order listed. Mix well. Pour into unbaked pie shell and bake at 350 degrees for about 50 minutes.

Step 2NOTE: You can protect the edges of the pie shell from becoming too dark by covering them with foil around the pie. There are also edge protectors sold in most stores that carry pie plates.
