oatmeal pie

This recipe came from a Lobster Shack in Maine. They have been serving it since 1968 ~ to much local acclaim. It is an unusual dessert similar to pecan pie, but not as sweet or rich. Has coconut in it as well. Hope you enjoy it. I have the cookbook N.E. Clam Shack recipes. The picture is the Maine coastline that I took up there last year at the Cliff House!

Ingredients

  • 2 large eggs
  • 3/4 cup whole milk
  • 4 tablespoons melted butter
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup granulted sugar
  • 3/4 cup light corn syrup
  • 3/4 cup cup quick-cooking (not instant) rolled oats
  • 1 - 9" pie shell

How To Make oatmeal pie

  • Step 1
    1. Preheat oven to 350 degrees.
  • Step 2
    2. In a large bowl, lightly whisk the eggs just until smooth. Whisk in the milk, melted butter, vanilla, coconut, sugar, and corn syrup. Stir in the rolled oats. Pour the mixture into the pie shell.
  • Step 3
    3. Bake in the preheated oven until the filling is no longer wobbly in the center and the top is light golden brown, about 40 minutes.
  • Step 4
    4. Cool the pie on a wire rack before cutting into wedges. Serve with a dollop of whipped cream, if desired. Serves 6-8
