no-bake blueberry pie

We live on our boat and this is an excellent, easy recipe that everyone asks for. Since most of the blueberries aren't cooked, they pop in your mouth and taste so fresh! It also doesn't heat up your kitchen on a hot summer's day! Enjoy!

Ingredients

  • 3 pints blueberries
  • 1 cup water
  • 1 - lemon, zest and juice
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • pinch salt
  • 1 tablespoon butter
  • 1 - 9-inch pie crust, baked

How To Make no-bake blueberry pie

  • Step 1
    Mix sugar, cornstarch, salt and water in pan. Add 1 1/2 cups of blueberries with lemon zest and juice
  • Step 2
    Cook and stir constantly over medium heat until thickened.
  • Step 3
    Stir in butter and let cool.
  • Step 4
    When cool, fold in remaining blueberries. Put in pie shell and refrigerate for approximately 2 hours or until set.
