This is my moms recipe. She's not with us anymore but when I make these it's like she's still here.

Ingredients

  • 2 - refrigerated pie crust
  • 2 large cans evaporated milk(plus enough milk to make 4 cups)
  • 8 - eggs (whites, and yokes divided)
  • 2 cups sugar(plus 1/4 cup for egg whites)
  • 4 - heaping tablespoons flour
  • 2 tablespoons butter
  • 2 teaspoons vanilla extract
  • 2 tablespoons corn syrup, light

How To Make my momma's homemade egg pies

  • Step 1
    following directions; bake pie crust. set aside
  • Step 2
    In 2 medium bowls seperate the eggs and set aside the egg whites for later.
  • Step 3
    on medium heat in heavy medium sauce pan, add milk, 1 1/2 cups of the sugar, bring to a simmer, until it starts to heat, stirring to keep from scorching. remove from heat
  • Step 4
    to the egg yokes add the rest of the sugar, and flour and a little water just enough to make it easy to mix, mixing well. To temper the yokes while stiring add 1 cup of the heated milk mixture, mixing well
  • Step 5
    return sauce pan to heat, while stirring add egg yoke mixture to milk, and sugar mixture mixing contentiously cooking until it thickens. about 5 to 10 minutes, remove from heat and add butter, and vanilla. mix well divide between the 2 pie crust.
  • Step 6
    beat the egg whites until firm peaks form, and add 1/4 cup sugar, and 2 tablespoons corn syrup, beating to mix well. divide between pies. put pies under broiler until browned on top. cool for about 30 minutes before serving
