Ingredients
- 2 - refrigerated pie crust
- 2 large cans evaporated milk(plus enough milk to make 4 cups)
- 8 - eggs (whites, and yokes divided)
- 2 cups sugar(plus 1/4 cup for egg whites)
- 4 - heaping tablespoons flour
- 2 tablespoons butter
- 2 teaspoons vanilla extract
- 2 tablespoons corn syrup, light
How To Make my momma's homemade egg pies

Step 1following directions; bake pie crust. set aside

Step 2In 2 medium bowls seperate the eggs and set aside the egg whites for later.

Step 3on medium heat in heavy medium sauce pan, add milk, 1 1/2 cups of the sugar, bring to a simmer, until it starts to heat, stirring to keep from scorching. remove from heat

Step 4to the egg yokes add the rest of the sugar, and flour and a little water just enough to make it easy to mix, mixing well. To temper the yokes while stiring add 1 cup of the heated milk mixture, mixing well

Step 5return sauce pan to heat, while stirring add egg yoke mixture to milk, and sugar mixture mixing contentiously cooking until it thickens. about 5 to 10 minutes, remove from heat and add butter, and vanilla. mix well divide between the 2 pie crust.

Step 6beat the egg whites until firm peaks form, and add 1/4 cup sugar, and 2 tablespoons corn syrup, beating to mix well. divide between pies. put pies under broiler until browned on top. cool for about 30 minutes before serving
