~ my anytime sweet tater pie ~
I make this pie more often than pumpkin as fresh sweet potatoes are available year round and it's my husbands favorite. This pies not just for Holidays, enjoy anytime!

Ingredients
- 3 medium sweet potatoes or enough to make 2 cups mashed
- 1/3 cup softened butter
- 1/2 cup plus 2 tablespoons brown sugar
- 2 eggs - lightly beaten
- 3/4 cup evaporated milk
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 9 - inch unbaked pie crust
How To Make ~ my anytime sweet tater pie ~

Step 1Cook your peeled and cubed sweet potatoes in enough water to cover, until fork tender. Drain and mash. Set aside.

Step 2In a medium bowl, cream together the butter and sugar until fluffy. Beat in eggs.

Step 3Next beat in milk, sweet potatoes, cinnamon, nutmeg, salt until smooth and well combined.

Step 4Preheat oven to 425 degree F. Pour into prepared pie crust, I then sprinkle with a little cinnamon. Place on sheet pan and carefully slide into oven. Bake for 15 minutes, then reduce oven to 350 and continue baking for another 40 - 45 minutes or until inserted knife comes out clean.

Step 5Cool on rack then slice and enjoy with a dollop of fresh whipped cream and a sprinkle of cinnamon if desired.
