1Cook your peeled and cubed sweet potatoes in enough water to cover, until fork tender. Drain and mash. Set aside.
2In a medium bowl, cream together the butter and sugar until fluffy. Beat in eggs.
3Next beat in milk, sweet potatoes, cinnamon, nutmeg, salt until smooth and well combined.
4Preheat oven to 425 degree F.
Pour into prepared pie crust, I then sprinkle with a little cinnamon.
Place on sheet pan and carefully slide into oven. Bake for 15 minutes, then reduce oven to 350 and continue baking for another 40 - 45 minutes or until inserted knife comes out clean.
5Cool on rack then slice and enjoy with a dollop of fresh whipped cream and a sprinkle of cinnamon if desired.
