I make this pie more often than pumpkin as fresh sweet potatoes are available year round and it's my husbands favorite. This pies not just for Holidays, enjoy anytime!

Ingredients

  • 3 medium sweet potatoes or enough to make 2 cups mashed
  • 1/3 cup softened butter
  • 1/2 cup plus 2 tablespoons brown sugar
  • 2 eggs - lightly beaten
  • 3/4 cup evaporated milk
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 9 - inch unbaked pie crust

How To Make ~ my anytime sweet tater pie ~

  • Step 1
    Cook your peeled and cubed sweet potatoes in enough water to cover, until fork tender. Drain and mash. Set aside.
  • Step 2
    In a medium bowl, cream together the butter and sugar until fluffy. Beat in eggs.
  • Step 3
    Next beat in milk, sweet potatoes, cinnamon, nutmeg, salt until smooth and well combined.
  • Step 4
    Preheat oven to 425 degree F. Pour into prepared pie crust, I then sprinkle with a little cinnamon. Place on sheet pan and carefully slide into oven. Bake for 15 minutes, then reduce oven to 350 and continue baking for another 40 - 45 minutes or until inserted knife comes out clean.
  • Step 5
    Cool on rack then slice and enjoy with a dollop of fresh whipped cream and a sprinkle of cinnamon if desired.
