1In a small bowl combine sugar, cornstarch, salt and cinnamon.
2In a large bowl, beat eggs. Stir in the pumpkin and sugar mixture. Gradually add half and half with a whisk. Pour into pie shell.
3Bake in preheated 400 degrees oven for 10 minutes. Reduce oven temp. to 350 degrees and bake 45-50 minutes longer or until a knife inserted in the middle comes out clean. Cool. Refrigerate left overs.
