I was given this recipe by my Mother-in-law who served it every Thanksgiving. It was love at first bite!

Ingredients

  • 1
    unbaked pie crust for a 9 inch pie
  • PINEAPPLE FILLING

  • 2 c
    crushed pineapple with juice
  • 1/2 c
    sugar
  • 2 Tbsp
    cornstarch
  • CREAM CHEESE FILLING

  • 8oz pkg
    cream cheese
  • 1/2 c
    sugar
  • 1/2 tsp
    salt
  • 2
    eggs
  • 1/2 c
    milk
  • 1/2 tsp
    pure vanilla extract

How to Make Mom's Pineapple Cream Cheese Pie

Step-by-Step

  1. Stir together ingredients for pineapple filling in saucepan. Bring to a boil & cook, stirring constantly, until thick & clear. Cool
  2. Beat cream cheese, sugar & salt until smooth & creamy. Add eggs, milk & vanilla & mix well.
  3. Spread cooled pineapple mixture in bottom of pie shell. Pour cream cheese mixture on top of pineapple.
  4. Bake at 400 degrees for 10 minutes. Lower temperature to 325 & bake for another 50 minutes.
  5. Serve chilled.
