I was given this recipe by my Mother-in-law who served it every Thanksgiving. It was love at first bite!

Ingredients

  • 1 - unbaked pie crust for a 9 inch pie
  • PINEAPPLE FILLING
  • 2 cups crushed pineapple with juice
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • CREAM CHEESE FILLING
  • 8oz packages cream cheese
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1/2 cup milk
  • 1/2 teaspoon pure vanilla extract

How To Make mom's pineapple cream cheese pie

  • Step 1
    Stir together ingredients for pineapple filling in saucepan. Bring to a boil & cook, stirring constantly, until thick & clear. Cool
  • Step 2
    Beat cream cheese, sugar & salt until smooth & creamy. Add eggs, milk & vanilla & mix well.
  • Step 3
    Spread cooled pineapple mixture in bottom of pie shell. Pour cream cheese mixture on top of pineapple.
  • Step 4
    Bake at 400 degrees for 10 minutes. Lower temperature to 325 & bake for another 50 minutes.
  • Step 5
    Serve chilled.
