mom's mini pecan pies
These are pure Holiday for me. Growing up my Mom would only make these at Christmas and Thanksgiving. The are made with pure LOVE. The best is to have them still warm outta the oven ..I will talk to them . "Dear little buttery flakey sweetness, Why do you only come around during the hoidays? I have missed you so!!" lol

Ingredients
- CRUST
- 6 ounces cream cheese, room temperature
- 2 sticks butter, room temperature
- 2 cups flour
- FILLING
- 3 - eggs
- 2 cups light brown sugar, firmly packed
- 2 tablespoons butter, room temperature
- 1 teaspoon vinegar
- 1 cup toasted chopped pecans
How To Make mom's mini pecan pies

Step 1Crust..mix butter and cream cheese. add flour. mix well with hands. form into a ball and place in refrgerator for an hour or so.

Step 2Preheat oven at 350

Step 3Mix filling..mix eggs, butter, and vinegar. Add brown sugar then pecans.

Step 4Using a mini muffin pan make small balls . For years we used our thumbs to form the crust but in most kitchen stores you can find a wooded tool to form the crust. Fill each pastry cup with filling.

Step 5Bake at 350 for around 20 min. Allow to cool for 10 min before removing from pan.

Step 6Note..my advice is to double or triple this recipe. This makes around 24-30 pies. It is just a tease ,lol
