How to Make Mom's Chess Pie
- Preheat oven to 325.
- Mix melted butter with sugar.
- Add lemon juice and cornmeal to the butter/sugar mixture.
- Beat eggs separately.
- Combine butter/sugar mixture and beaten eggs. Mix thoroughly, but with a very light hand.
- Pour into unbaked pie shell.
- Bake 45-50 minutes at 325. The pie is done when it is puffed up and firm in the center.
