A Southern favorite, although I enjoyed my mother's version, growing up in the Midwest. Sweet tooth required!

Ingredients

  • 1 stick melted butter
  • 2 cups sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornmeal (scant)
  • 5 - eggs
  • 1 - unbaked pie shell

How To Make mom's chess pie

  • Step 1
    Preheat oven to 325.
  • Step 2
    Mix melted butter with sugar.
  • Step 3
    Add lemon juice and cornmeal to the butter/sugar mixture.
  • Step 4
    Beat eggs separately.
  • Step 5
    Combine butter/sugar mixture and beaten eggs. Mix thoroughly, but with a very light hand.
  • Step 6
    Pour into unbaked pie shell.
  • Step 7
    Bake 45-50 minutes at 325. The pie is done when it is puffed up and firm in the center.
