mock pecan pie
My kids don't like nuts, but love the inside of a pecan pie. I found this receipt in Southern Food and it has become a big hit with everyone. I now make a REAL pecan pie and a MOCK one.

Ingredients
- 2 - eggs
- 2/3 cup margarine/butter, melted
- 2/3 cup granulated sugar
- 2/3 cup light corn syrup
- 2/3 cup regular rolled oats
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 - unbaked 9-inch pie crust (i use a deep dish, forzen pie crust)
How To Make mock pecan pie

Step 1Combine the eggs, margarine, sugar, corn syrup, oats, salt and vanilla in a bowl. Mix well.

Step 2Pour into unbaked pie crust and bake for 1 hour at 350. You may want to put the pie on a cookie sheet to catch any over flow
