mock apple pie (zucchini)

I made this pie, only because my cousin gave me a huge zucchini and I wanted to make something good. My Son and Grandson really enjoyed this and asked where I got the apples. When I told them it was made with zucchini, they couldn't believe it. This was one of the best "zucchini" things to make. They keep requesting it. You all will be amazed at how good it tastes.

Ingredients

  • 4 cups zucchini
  • 2 tablespoons lemon juice
  • 1 1/4 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons cream of tartar
  • dash - nutmeg
  • 3 tablespoons flour
  • 2 tablespoons butter
  • 2 - prepared pie crust

How To Make mock apple pie (zucchini)

  • Step 1
    Peel and then cut the zucchini in half lengthwise. Remove seeds by using a teaspoon to scrape them out. Cut the zucchini into slices ( it will look like apple slices) . Cook the zucchini in a pot with water, cooking until tender, but not mushy. Drain in a colander and let cool. When cool, add all ingredients except the butter and mix well. Pour the mixture into the prepared crust and dot with butter. Cover with the top crust or make the top crust into a lattice crust. Brush crust with milk and bake 400 degrees for 35-40 minutes or until nicely browned.
