Love this fluffy and refreshing pie that takes no time to throw together.

Ingredients

  • 2 cups whipping cream
  • 2 tablespoons confectioners sugar
  • 2 cups cold milk
  • 1 1/2 teaspoons peppermint extract
  • 5 or 6 - drops green food coloring, optional
  • 2 packages 3.4oz. instant vanilla pudding mix
  • 1 cup mini dark chocolate chips
  • 1 - 9inche pastry shell, baked & cooled

How To Make mint chocolate chip pie

  • Step 1
    In a small mixing bowl, beat your cream and sugar until soft peaks form. In a large mixing bowl, mix you milk, extract and food coloring.
  • Step 2
    Add pudding mixes; beat on low speed for 2 minutes or until thickened. Fold in the cream mixture and the mini chips. Pour into cooled baked pastry shell. Refrigerate for 3 hours or until set. 6-8 servings
