Ingredients
- 2 packages pillsbury ready-made pie crust dough
- 8 ounces cream cheese, room temperature
- 1/2 cup sugar
- 1 can pumpkin puree
- 3 - eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1$ teaspoon ground cloves

How To Make mini pumpkin pie bites

Step 1Preheat oven to 350 degrees F. Lightly grease mini muffin tin.

Step 2Remove dough from package. Roll the pie dough slightly thinner.

Step 3Use a circular cookie cutter to cut 12 circular shapes from each pie crust (24 total)....slightly larger than the mini muffin cups in the pan.

Step 4Press the dough circulars into each cup in the mini muffin pan.

Step 5In a small bowl, separate 1 egg white from egg yolk, reserving the egg white. Brush egg whites on the top edges of each pie dough.

Step 6In a medium bowl, blend cream cheese, sugar, canned pumpkin, remaining 2 eggs, vanilla and seasonings together until thoroughly combined.

Step 7Spoon mixture into each pie dough.

Step 8Bake for 12-15 minutes.

Step 9Remove from oven and cool on wire rack for 20 minutes.

Step 10Carefully remove each mini pie bite, place on platter, serve, and enjoy!
