Sometimes a large piece of pie is just too much after a big meal. These little delectable bites are a perfect replacement. Also great for parties or potlucks.

  • 2 pkg
    pillsbury ready-made pie crust dough
  • 8 oz
    cream cheese, room temperature
  • 1/2 c
  • 1 can(s)
    pumpkin puree
  • 3
  • 1 tsp
    vanilla extract
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
  • 1/2 tsp
    ground ginger
  • 1$ tsp
    ground cloves
  • ·

  • ·
    mini muffin tin

How to Make Mini Pumpkin Pie Bites


  1. Preheat oven to 350 degrees F.
    Lightly grease mini muffin tin.
  2. Remove dough from package. Roll the pie dough slightly thinner.
  3. Use a circular cookie cutter to cut 12 circular shapes from each pie crust (24 total)....slightly larger than the mini muffin cups in the pan.
  4. Press the dough circulars into each cup in the mini muffin pan.
  5. In a small bowl, separate 1 egg white from egg yolk, reserving the egg white. Brush egg whites on the top edges of each pie dough.
  6. In a medium bowl, blend cream cheese, sugar, canned pumpkin, remaining 2 eggs, vanilla and seasonings together until thoroughly combined.
  7. Spoon mixture into each pie dough.

  8. Bake for 12-15 minutes.
  9. Remove from oven and cool on wire rack for 20 minutes.
  10. Carefully remove each mini pie bite, place on platter, serve, and enjoy!
