mini apple pies

I found this recipe in a recipe club I use to belong to. Every time I make these they disappear in a hurry. You'll see. And they are so simple to make. You will get compliments every time you make them. Great for hubby' lunch box too.

Ingredients

  • 2 medium tart baking apples
  • 1/4 cup sugar
  • 2 teaspoons all purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1 - sheet of refrigerated pie crust (1/2 box)

How To Make mini apple pies

  • Step 1
    Preheat oven to 425 degrees. Peel, core and chop apples into 1/4" pieces. In a medium bowl, combine apples, sugar, flour and cinnamon. toss gently. Set aside.
  • Step 2
    Open and unroll pie crust flat onto work surface. Using 4" wide bowl or cup, cut out 5 circles, reserving scraps. Press each circle inside 5 spaces of muffin tin.
  • Step 3
    Evenly divide apple mixture into each prepared muffin cup. Cut reserved dough scraps into strips, 1/4" wide. Top each pie with strips. Fill the remaining empty muffin cup 1/4 way up with water. (You can make 6 pies if you cut the strips smaller)
  • Step 4
    Bake until bubbling, about 18 minutes. Let pies cool in muffin tin, then remove. Serve with vanilla ice cream or whipped cream on top. ENJOY
