mini apple pies

I found this recipe in a recipe club I use to belong to. Every time I make these they disappear in a hurry. You'll see. And they are so simple to make. You will get compliments every time you make them. Great for hubby' lunch box too.

Ingredients
- 2 medium tart baking apples
- 1/4 cup sugar
- 2 teaspoons all purpose flour
- 3/4 teaspoon ground cinnamon
- 1 - sheet of refrigerated pie crust (1/2 box)
How To Make mini apple pies

Step 1Preheat oven to 425 degrees. Peel, core and chop apples into 1/4" pieces. In a medium bowl, combine apples, sugar, flour and cinnamon. toss gently. Set aside.

Step 2Open and unroll pie crust flat onto work surface. Using 4" wide bowl or cup, cut out 5 circles, reserving scraps. Press each circle inside 5 spaces of muffin tin.

Step 3Evenly divide apple mixture into each prepared muffin cup. Cut reserved dough scraps into strips, 1/4" wide. Top each pie with strips. Fill the remaining empty muffin cup 1/4 way up with water. (You can make 6 pies if you cut the strips smaller)

Step 4Bake until bubbling, about 18 minutes. Let pies cool in muffin tin, then remove. Serve with vanilla ice cream or whipped cream on top. ENJOY
