mincemeat

I found this recipe in my old 1949 Cookbook and wanted to post it for those of you that have never eaten mincemeat and would like to try and make it. My Mother used to make mincemeat and can it and I can remember how delicious it was. You can also buy a box of None_such mincemeat and it is very good also. I have not made this recipe so it isnt tried and true.

Ingredients
- 1 pound beef, cut-up
- 2 pounds tart apples, peeled, quartered, cored,
- 2 -2/3 cups seeded raisins
- 2 -1/2 cups currants
- 1/4 pound citron
- 1/4 pound ground suet
- 2 teaspoons salt
- 1 tablespoon nutmeg
- 2 cups sugar
- 1 cup strong coffee beverage or cider
- 1 tablespoon powdered cloves
- 1 tablespoon cinnamon
- 1 cup meat liquor (i think this is broth off of meat)
How To Make mincemeat

Step 1This recipe is to be canned and makes 5 pints. It will be ready for you to use in your pies when ever you open.

Step 2Cook meat, in boiling water to cover, covered, until tender; cool in meat liquor. Put meat through food chopper, saving 1 cup liquor

Step 3Put the next 4 ing. through chopper,apples, raisins,currants and citron. Add the ground meat, suet, salt, nutmeg, sugar, coffee, cloves cinnamon and meat liquor.

Step 4Put in to a kettle and simmer, uncovered, 1 hour., stirring often to prevent burning.

Step 5Pour at once into clean sterilized hot jars. Adjust lids on as directed. Set on wire rack in deep covered kettle with boiling water to cover tops at least 1". Process 30 min. counting time from time of boiling. Remove immediately adjust seal ( tighten lightly)
