megan's sweet potato pie

Until I lived in Maryland, I had never had a sweet potato pie. There was a minister's wife who told me I would never go back to pumpkin once I tried her Sweet Potato Pie, and I was hooked. But she never shared the recipe since she served it at her restaurant. SO... Then I moved home to Illinois, and told a friend, who then shared the recipe with me! This is hands down a favorite! Just don't tell my hubby, because he says he won't eat sweet potatoes, but tells everyone I make the best pumpkin pie (I have to hide the peels, and make it when he isn't home so he doesn't know he likes it)!

Ingredients

  • 4 large sweet potatoes
  • 1 1/2 sticks butter
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon lemon juice
  • 3 medium eggs
  • 1 teaspoon cornstarch
  • 1/2 cup sweetened condensed milk
  • 3 - 9" pie crusts

How To Make megan's sweet potato pie

  • Step 1
    Peel potatoes and dice and boil until tender. Drain well. Put in mixer and blend on medium speed, add all ingredients one at a time in order given and mix well. Bake at 350 degrees for 50-60 minutes or until knife comes out clean in center. Makes 2-3 pies.
