megan's sweet potato pie

Until I lived in Maryland, I had never had a sweet potato pie. There was a minister's wife who told me I would never go back to pumpkin once I tried her Sweet Potato Pie, and I was hooked. But she never shared the recipe since she served it at her restaurant. SO... Then I moved home to Illinois, and told a friend, who then shared the recipe with me! This is hands down a favorite! Just don't tell my hubby, because he says he won't eat sweet potatoes, but tells everyone I make the best pumpkin pie (I have to hide the peels, and make it when he isn't home so he doesn't know he likes it)!

4 lgsweet potatoes

1 1/2 stickbutter

1 1/2 csugar

1 1/2 tspvanilla

1/2 tspnutmeg

1 tspcinnamon

1/2 tsplemon juice

3 mdeggs

1 tspcornstarch

1/2 csweetened condensed milk

How To Make megan's sweet potato pie

1Peel potatoes and dice and boil until tender. Drain well. Put in mixer and blend on medium speed, add all ingredients one at a time in order given and mix well. Bake at 350 degrees for 50-60 minutes or until knife comes out clean in center. Makes 2-3 pies.
