During the depression years, my grandma had to take charge of feeding the family and as a result went door to door selling salad master pans. Her cooking is what sold the customers, making her one of the top sellers in all the country. This apple pie is one of her most prized desserts, and most requested.

Ingredients

  • 2 cups sifted flour
  • 1 cup butter (minus two tb.)
  • 1/2 cup ice water
  • 1 teaspoon salt
  • APPLE FILLING
  • 5 medium yellow delicious apples (per pie)
  • 3/4 cup sugar (per pie)
  • 1 teaspoon cinnamon (per pie)
  • 2 tablespoons butter (per pie)
  • MAKES TWO PIES!

How To Make maudie mae's famous apple pie

  • Step 1
    Combine all dough ingrediants in bowl except water. Quickly sprinkle ICE water over flour mixture, forming it together with fork. Do not over mix!
  • Step 2
    With floured hands. lay out dough on cloth covered counter. Divide in four pieces and roll out one piece at a time with cloth covered rolling pin to make pie circles. Do not over-use flour!
  • Step 3
    Put crust over pie pan,leave excess dough over sides (to be fluted with top crust after filling).
  • Step 4
    Shred apples and combine with sugar and cinnamon. Put in pie crust and dot with butter. (If apples are dry, add a little bit of water and sugar).
  • Step 5
    Place top crust over filling and flute crusts with fingers. Vent the top crust by using a knife to cut a few slits like a star.
  • Step 6
    For a shiny crust, whip egg white with a little bit of water, and rub on with pastry brush. Sprinkle a little bit of sugar on top.
  • Step 7
    Bake at 425 until crust begins to turn light brown, about 25 minutes. Reduce temperature to 350 degrees, and Transfer to a wire rack to cool. Serve pie with vanilla ice cream, if desired.
