ma's coconut meringue pie

My ma made the best coconut pie ever!! As many older people do though, she didn't go by a specific recipe, because she had made them for so long that she just "knew". Several years ago, before she passed away, as she was making them, I was trying to write down step by step the ingredients and instructions. This coconut pie is BY FAR better than any I have ever tried from any bakery, restaurant or certainly store bought (with the only exception being a small cafe in Burkburnett, Tx called Wina's).

Ingredients

  • 1 1/3 cups sugar
  • 1 1/2 cups evaporated milk
  • 6 tablespoons all purpose flour
  • 1 1/2 cups water
  • 1 stick margarine, softened
  • 1 teaspoon vanilla
  • 4 egg yolks
  • 1 bag shredded coconut
  • 9 in pie shell, baked
  • 4 egg whites
  • 1/4 cup sugar

How To Make ma's coconut meringue pie

  • Step 1
    Bake Pie shell according to package instructions. Set oven to Broil on low. Spread about 1/2 bags of coconut on baking pan and toast about 5 mins, stirring occasionally, until golden brown.
  • Step 2
    FILLING: In a large pot, combine 1 1/3 cups sugar & flour. Then, in a separate bowl, combine 1 1/2 cup evaporated milk and 1 1/2 cup of water and stir to mix. Then into milk/water mixture, combine the egg yolks and softened stick of butter and stir until smooth. Pour Egg mixture into flour/sugar mixture and stir until smooth before adding heat. Then set heat on stove to med-low heat. Cook and continually stir until thick and bubbly, then reduce heat to low and cook another 3-4 mins. Remove from heat, stir in vanilla and the toasted coconut, to desired amount.
  • Step 3
    MERINGUE: Beat 4 egg whites and 1/4 cup sugar in a separate bowl until soft peaks form. Then, spread meringue over pie and sprinkle to desired amount with remaining coconut and broil on low until golden brown.
