1 tsp. vanilla
1/2 tsp. salt
1 1/2 pounds ricotta cheese
4 eggs
1/2 cup sugar
1/2 cup milk
1/2 cup shredded coconut
1 nine inch pie shell

How to Make Mary’s Coconut Pie


  • 1Preheat oven to 425. Mix all ingredients and pour into pie shell.
  • 2. Bake at 425 for 10 minutes, then lower temperature to 350. Bake for 45 to 50 minutes. Check often.
  • 3Remove from oven when pie is lightly brown and center is firm. Cool before serving. Garnish with whipped cream. Makes 1 pie
