mama's egg custard pie
This is a recipe my mom made often. I loved it. When I was young, I scraped the meringue off and just ate the egg custard.

Ingredients
- 1 unbaked pie shell, homemade or frozen
- 3 large eggs, beaten
- 12 ounces evaporated milk
- 1 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- MERINGUE
- 6 large eggs, whites divided from yolks at room temperature
- 1 1/2 teaspoons cream of tartar
- 1 1/2 cups superfine sugar
- 1/2 teaspoon vanilla extract
How To Make mama's egg custard pie

Step 1Bake the pie crust at 400 degrees F for 5 minutes; cool. Leave the oven on.

Step 2Combine the remaining custard ingredients in a bowl and mix well with a wire whisk.

Step 3Pour into the pie shell and bake at 400 degrees for 10 minutes. Reduce the heat to 325 degrees and bake for 15 minutes.

Step 4Add the meringue topping, and return to the oven and bake another 15 minutes until the topping is nicely browned.

Step 5Let cool to room temperature before serving. Store in the refrigerator.
