This is a recipe my mom made often. I loved it. When I was young, I scraped the meringue off and just ate the egg custard.

Ingredients

  • 1 unbaked pie shell, homemade or frozen
  • 3 large eggs, beaten
  • 12 ounces evaporated milk
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • MERINGUE
  • 6 large eggs, whites divided from yolks at room temperature
  • 1 1/2 teaspoons cream of tartar
  • 1 1/2 cups superfine sugar
  • 1/2 teaspoon vanilla extract

How To Make mama's egg custard pie

  • Step 1
    Bake the pie crust at 400 degrees F for 5 minutes; cool. Leave the oven on.
  • Step 2
    Combine the remaining custard ingredients in a bowl and mix well with a wire whisk.
  • Step 3
    Pour into the pie shell and bake at 400 degrees for 10 minutes. Reduce the heat to 325 degrees and bake for 15 minutes.
  • Step 4
    Add the meringue topping, and return to the oven and bake another 15 minutes until the topping is nicely browned.
  • Step 5
    Let cool to room temperature before serving. Store in the refrigerator.
