I haven't made this pie yet, but thought it sounded interesting. I found this recipe in the "Red Hat Society Cookbook".

    light corn syrup
  • 1/2 c
  • 2 Tbsp
    butter, melted
  • 1/4 tsp
    almond extract
  • 1/8 tsp
  • 3 1/2 oz
    can flaked coconut
  • 1 c
    sliced almonds, or chopped pecans
  • 1
    9 inch unbaked pie crust

How to Make Macaroon Pie


  1. Preheat the oven to 350 degrees. In a medium bowl, beat the eggs slightly. Beat in the corn syrup, sugar, butter, almond extract, and salt. Stir in the coconut and nuts. Pour into a pie crust. Bake for 50 minutes, or until a knife inserted halfway between the center and edge comes out clean. Cool before serving.
