I haven't made this pie yet, but thought it sounded interesting. I found this recipe in the "Red Hat Society Cookbook".

Ingredients

  • 3 - eggs
  • 1 cup light corn syrup
  • 1/2 cup sugar
  • 2 tablespoons butter, melted
  • 1/4 teaspoon almond extract
  • 1/8 teaspoon salt
  • 3 1/2 ounces can flaked coconut
  • 1 cup sliced almonds, or chopped pecans
  • 1 - 9 inch unbaked pie crust

How To Make macaroon pie

  • Step 1
    Preheat the oven to 350 degrees. In a medium bowl, beat the eggs slightly. Beat in the corn syrup, sugar, butter, almond extract, and salt. Stir in the coconut and nuts. Pour into a pie crust. Bake for 50 minutes, or until a knife inserted halfway between the center and edge comes out clean. Cool before serving.
