I haven't made this pie yet, but thought it sounded interesting. I found this recipe in the "Red Hat Society Cookbook".

Ingredients
- 3 - eggs
- 1 cup light corn syrup
- 1/2 cup sugar
- 2 tablespoons butter, melted
- 1/4 teaspoon almond extract
- 1/8 teaspoon salt
- 3 1/2 ounces can flaked coconut
- 1 cup sliced almonds, or chopped pecans
- 1 - 9 inch unbaked pie crust
How To Make macaroon pie

Step 1Preheat the oven to 350 degrees. In a medium bowl, beat the eggs slightly. Beat in the corn syrup, sugar, butter, almond extract, and salt. Stir in the coconut and nuts. Pour into a pie crust. Bake for 50 minutes, or until a knife inserted halfway between the center and edge comes out clean. Cool before serving.
