luscious and hearty sheppards pie

I have never had or made Sheppards Pie until I met my husband. It is his most favorite thing to eat so I played and tweeked with this recipe. Its been a big hit at gatherings and is always requested. Hope you enjoy it!

Ingredients

  • FILLING
  • 2 pounds lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons cooking oil
  • 2 cans green beans, drained
  • 1 can carrots, drained
  • 1 can corn, drained
  • 2 jars beef gravy
  • 2 teaspoons horseradish
  • - salt and pepper to taste
  • TOPPING
  • 8 medium potatoes, peeled and cubed
  • 8 oz packages cream cheese, room temperature
  • 1/2 stick butter
  • 1/3 cup evaporated milk, can use more if needed
  • 2 - egg whites
  • - salt to taste

How To Make luscious and hearty sheppards pie

  • Step 1
    In a large skillet, brown beef, onion and garlic in 2 tablespoons oil. Drain. Return to skillet and mix in green beans, carrots, corn and horseradish. You can add any veggie of choice, great for adding leftover veggies as well. Add gravy, one jar at a time until thoroughly mixed through. I usually use one and nearly all of the second jar. Pour into a greased 11 in x 7 in baking pan.
  • Step 2
    Cook the potatoes in boiling salted water until tender, drain. Mash with butter, cream cheese and enough evaporated milk to make potatoes smooth. Salt to taste.
  • Step 3
    Beat egg whites until stiff peaks form. Fold gently into mash potatoes. Spoon over beef mixture.
  • Step 4
    Bake, uncovered, at 425 degrees for 15 minutes. Reduce oven to 350 degrees and bake 20 minutes longer or until meat mixture is bubbly. Hope you enjoy.
