low sugar blackberry cobbler

This is a great recipe. I tweaked it to make it low sugar by using half sugar and half splenda. When I was a new bride a girlfriend made this for a tupperware party. I had never had blackberry cobbler before and I could've ate the whole thing, she had doubled the recipe. Hope you enjoy this. They had blackberries on sale at Krogers, I used 4 containers, and ate a few fresh MMmmmm

Ingredients

  • 1 quart berries mixed with 1/2 cup sugar ( i used 1/4 cup splenda and 1/4 cup sugar)
  • 2 cups flour
  • 3 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1/4 cup butter
  • 1 cup confectioners' sugar ( i used 1/2 sugar, 1/2 splenda)

How To Make low sugar blackberry cobbler

  • Step 1
    sift flour, baking powder, sugar and salt
  • Step 2
    Mix in shortening with large mixing spoon
  • Step 3
    add in milk, blend well ( by hand )
  • Step 4
    In a sprayed 8 x 8 pan, pat down 1/2 of dough in bottom. (I wet my fingertips with cold water to do this. Keeps it from sticking to hands
  • Step 5
    sprinkle sugar coated berries over dough
  • Step 6
    spread remaining dough over berries ( as best as you can )
  • Step 7
    Bake in preheated 450 degree oven for 20 minutes, or more, until golden brown
  • Step 8
    NOTE* I pulled out after 10 minutes to spread out top dough better while warm, and returned to oven
  • Step 9
    mix butter and powdered sugar together in a small bowl
  • Step 10
    when cobbler is golden, smear butter/sugar mixture over the top of cobbler and return to hot oven for another 10 minutes.
