This was one of my favorite pies my Mom used to make! It's very tart and yummy!

Ingredients
- 1-1/3 cup 15 oz can eagle brand sweetened condensed milk
- 1/2 cup lemon juice
- 2 large egg yolks, reserve whites if you want to make meringue
- 1 cup toasted flaked coconut
- 1/2 cup graham crackers crumbs
- 1/2 cup ginger snap crumbs
- 1/2 stick butter (melted)
- 2 tablespoons flour
How To Make lemon pie

Step 1Pie crust: Mix coconut, crushed graham crackers & crushed ginger snaps with melted butter and flour. Pat into a pie dish and start filling below.

Step 2Pie filling: In medium size mixing bowl blend milk, lemon juice & egg yolks. Whisk until mixture has thickened.

Step 3Use a spatula and pour your lemon pie into your pie crust. If you want you can make meringue, I'm not a fan so I just use whipping cream.
