Momma's Lemon Pie recipe! AllI can say is YUM!

Ingredients

  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons flour
  • 3/4 cup boiling water
  • 2 - eggs yolk, save whites for meringue
  • 1 teaspoon butter
  • 1 - lemon zest, grated
  • 3 tablespoons lemon juice
  • MERINGUE:
  • 4 - egg whites, stiffly beaten to form peaks
  • 1/2 cup sugar
  • 1 - pie crust shell, baked

How To Make lemon pie

  • Step 1
    FOR PIE: Mix cornstarch,sugar and flour and pour boiling water over this. Stir and cook unil thick.
  • Step 2
    Add egg yolks,butter, lemon juice and zest. Cook until egg thckens. Placed in as baked pie crust.
  • Step 3
    FOR MERINGUE: Preheat oven to 400 degrees. Beat egg whites until they are stiff and form high peaks. Slowly add sugaar.Beat at medium speed for about 1 minute.
  • Step 4
    Immediately spread meringue over pie, carefully sealing to edge of pastry to prevent shrinkage of meringue. Bake at 400 degrees for about 10 minutes until peaks are browned.
