My mother made one of these pies most Saturdays, as it was one of my dad’s favorites. So easy! Key lime juice can also be substituted for the lemon juice.

Ingredients
- 2 lemons
- 8 ounces cream cheese
- 1 can eagle brand sweetened condensed milk (14 oz)
- 1 teaspoon white vanilla
- 8 ounces whipped topping (like Cool Whip)
- 1 graham cracker pie crust
How To Make lemon icebox pie

Step 1Juice the lemons and set juice aside.

Step 2Microwave the cream cheese in a large bowl for 45 seconds.

Step 3Add the lemon juice, sweetened condensed milk, and vanilla to the cream cheese. Stir until smooth.

Step 4Fold in the whipped topping until well blended.

Step 5Pour into the pie shell.
