- 1 cup sugar
- 1/4 cup flour
- 1/4 cup butter, melted
- 1/2 teaspoon salt
- 2 - eggs, separated
- - juice of 2 lemons
- 1/4 cup lemon rind
- 1 cup milk
- 1 - 9" unbaked pie shell
How To Make lemon cake pie

Step 1Preheat oven to 350 degrees Combine: sugar, flour, butter, salt and eggyolks Beat well Add lemon juice and peel Add milk, beating slowly Beat egg whites until stiff but not dry, fold in to mixture

Step 2Bake pie shell for 5 minutes Ladle lemon pie mixture into shell and bake 40 to 50 minutes or until filling is set Makes 6 to 8 servings
