- 1 - 9 inch deep-dish pie crust, unbaked
- 3 - eggs, separated
- 2 tablespoons grated lemon peel
- 2/3 cup lemon juice
- 1 cup milk
- 1 1/4 cups sugar
- 1/3 cup all-purpose flour (do not use self-rising flour)

Step 1Heat oven to 350 degrees.

Step 2Beat egg whites in large mixer bowl until stiff peaks form; reserve. Beat egg yolks; beat in lemon peel, lemon juice and milk. Add sugar and flour and beat until smooth. Beat lemon mixture into egg whites on low speed of mixer until blended, about one minute.

Step 3Pour into pie crust. Bake until golden brown, 45 - 50 minutes. May be served with whipped cream.
