One of my favorite pies. My Mom used to make this for me.

Ingredients

  • 1 20oz cans dole crushed pineapple (undrained0
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon butter or margarine
  • 1 tablespoon lemon juice
  • 1 package pie crust for 9 in. pie

How To Make lattice pineapple pie

  • Step 1
    Mix together pineapple, sugar, cornstarch & salt in pan. Cook & stir until thickened and turns clear. Stir in butter & lemon juice. Cool about 10 min.
  • Step 2
    Pour into unbaked 9" shell. Cut remaining crust into 1 " strips for lattice top. Weave strips crisscross over pie. Pinch edges. Egg wash the crust. Sprinkle top with a little sugar & cinnamon.
  • Step 3
    Bake at 400 degrees for 25-30 min. until light golden brown.
