Nothing I used to like more when I was a young girl, than to go stay with my Aunt Shelba. She and my Grandma were the best cooks. They would always make me special dishes and desserts while I was there. They have a lot to do with why I like to cook so much. Here is one of those recipes.

Ingredients

  • 4
    eggs, separated
  • 1/2 c
    fresh squezzed lime juice
  • 1 tsp
    lime rind
  • 1 can(s)
    15 oz. can of condensed milk
  • 2
    drops of green food coloring
  • 1
    baked pie shell
  • 1/2 c
    sugar
  • 1 tsp
    lime juice

How to Make Key Lime Pie

Step-by-Step

  1. Beat 4 egg yolks till light and lemon colored. Add 1/2 cup lime juice and 1 tsp. lime rind. Beat in contents of 15 oz can of eagle brand condensed milk. Add green food coloring a drop at a time to give a natural green tint.
  2. Pour this custard into a baked deep dish pie shell.
  3. Beat 4 eqq whites until stiff but not dry. Beat in sugar gradually and 1 tsp of lime juice. Spread meringue thickly over pie filling making sure to seal around the edge of pie crust. Bring up in peaks. Bake at 350 degrees for 15 minutes or until delicately brown. Serve the pie well chilled.
